Used to slice vegetables, chop meat, parsley, crush tomatoes, chisel sorrel.

It can also cut as Julienne, brunoise, and lettuces in chiffonnade. Rigid blade of about 20 cm, with a “domed” edge to facilitate the pendulum movement.

Also called “couteau de tour” by pastry cooks and bakers.
